Portion Perfect Salad with Chicken, Avocado and Apple

This is a classic Portion Perfect meal, but it's so yummy, you won't believe it's good for you.

Menu:

  • 3 oz. cubed organic chicken breast—this one was roasted. 
  • 1/3 avocado, sliced
  • 1/4 small iceberg lettuce, for it's cool crunch
  • Handful small baby lettuces that are high-impact, nutritionally (spinach, arugula, kale)
  • 1/2 apple, sliced 

A lot of people avoid eating avocados because they're think high in fat, but we can't get enough of them. For starters, avocados are rich in good fats, that feed our brains. 

On the question, how much avocado is too much?, unlike nuts—consuming high quantities of nuts can be toxic—we think it's okay to overdo it on the avocado.
