Portion Perfect Dinner: Spaghetti Squash, Meat Sauce and Garlic Bread with Butter

Menu

  • Protein: Lean ground beef
  • Veggies: Spaghetti squash
  • Whole grain: Garlic bread
  • Fruit: Marinara Sauce
  • Healthy Fat: Butter, for bread

Prep Notes

  1. Cut spaghetti squash in half, seed, and bake at 400º until tender, for 30-45 minutes.
  2. Let cool for 20 minutes, and scrape the squash with a fork to create "noodles."
  3. Add marinara sauce to cooked organic ground beef and simmer.
  4. Top spaghetti squash with meat sauce and serve with garlic bread on the side.

Once you've tried the squash au naturel, go for some interesting taste combos. Here, we rubbed the squash with olive oil and chopped garlic prior to cooking. The squash had a yummy garlicky taste all the way through, and we used the roasted garlic as a spread with butter on the bread. Try rubbing a little butter with a sprinkling of nutmeg on the squash before popping it in the oven for a wintery, hearty flavor.
