Bacon-Lettuce-and-Tomato Inspired Summer Salad

Lettuce, avocado and tomatoes with a yummy balsamic dressing

Check out this BLT-inspired salad with a little addition of avocado and spinach, topped off with a yummy balsamic dressing. For a vegetarian version, substitute with tempeh bacon bits.

  • 4 thick slices bacon
  • Small head of lettuce; handful of spinach leaves
  • A handful of cherry tomatoes
  • 1 Avocado
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon dijon mustard
  • Squeeze of fresh lemon juice
  • 1/2 teaspoon sea salt

How To

  1. Cook bacon, straining excess fat.
  2. Wash and chop lettuce.
  3. Wash and chop cherry tomatoes.
  4. Peel, pit, and chop avocado.
  5. Combine lettuce, tomatoes and avocado in your XL lidded container.
  6. Chop bacon and reserve in your medium lidded container.
  7. To make dressing, whisk together: olive oil, vinegar, mustard, lemon juice, and sea salt.

Reserve dressing in your smallest lidded container, and drizzle over salad right before enjoying!
