One of the easiest ways to enjoy summer the most is to get great-for-you nutrition that's simple in the extreme.

Take simple roasted organic chicken breast and spinach leaves. One could probably get by on that every day if it weren't for the boredom—and the need to eat from a variety of foods.

It's all the stuff in between that counts: Spice up your everyday chicken and spinach salad with a mango salsa made with avocado, red pepper, lime, cilantro and sweet onions.

It's super simple to whip up:

Ingredients

  • 1 firm, but ripe avocado
  • 1 mango, peeled, pitted and diced
  • 1/4 cup sweet onion, finely chopped
  • 1/4 cup red bell pepper, finely chopped
  • 1 tablespoon cilantro leaves, finely chopped
  • 1 tablespoon lime juice
  • Jalapeño pepper, stemmed, seeded and minced, to taste (optional)

How To

  1. Combine ingredients in your XL lidded container, available in the Prep n' Store Contatiner Set, and when you're ready to eat, give it a stir.
  2. Enjoy!
