When making yummy breakfast out of simple eggs, staying on track with your perfect portions is a cinch with the Portion Perfect weight loss system.

This breakfast meal is included in one of the menu plans in the handbook to the system. Simply stay within the portion sizes set out in your bento set, as shown below in Clear/Melon, and the rest is a no-brainer.

In the handbook this menu calls for cantaloupe melon, but we've substituted it with avocado. Technically it's a fruit, and we know that's a lot of fat—but it's great for you and we can't get enough of it. That's what it's all about: helping you make good choices when it comes to what works for you.

Ingredients

  • Eggs
  • Whole wheat bread
  • Butter
  • Avocado, with a squirt of lemon juice to prevent browning
  • Butter
  • Dijon mustard

How To

  1. Bring a large saucepan filled with water to a boil then add eggs.
  2. Simmer gently for 4-5 minutes, 10-12 for harder yolks. Chill briefly under cold running water to stop the cooking process.
  3. While eggs are cooking, toast bread, spread with butter and Dijon mustard, slice avocado.

Cook eggs longer for a harder yolk—they travel well, later on for lunch.  Arrange and enjoy—it works in any number of ways.
