Sweet, Simple Chicken-and-Fruit Wraps

Chicken Wrap with Grapes and Cranberries

Chicken Fruit Wraps Make Perfect Bento Box Lunches

These sweet and simple little roll-ups are great for our work lunches and our kids' lunches—even as appetizers and prep-ahead hors d'oeuvres.

This couldn't be easier: Simply form the filling—we love our updated new classic healthy chicken salad with yogurt, fruit, lemon and toasted almonds— into a sausage shape in the middle of a whole wheat tortilla, and just roll it up!

We love this mix—but you can use any of your favorite fillings. The whole wheat tortilla adds a little nutty flavor, too.

Try tuna salad, chicken Waldorf salad, or a salmon salad as you would make for sandwiches—even leftovers work. They're easy to prep ahead of time and wrap up on the fly for lunch—in the morning or the night before.

Pin it in place with a food pick or two in Panda or Nature, and you can store them in the fridge, and pack and tote them for lunch!  If you can keep from eating them right away, that is.

How To

  1. Form the chicken salad mix into a sausage-like roll
  2. Center it in the middle of the tortilla, and roll it up.
  3. Secure it into place before cutting or storing with a food pick.

A pinch of herbs like chives or thyme, or spice like curry powder can add a little complexity to the mix.

Tuck in any chutneys, dips, or dressings in with your bento's smallest lidded container, and you're good to go!

If you're looking for new breakfast ideas, try one of these for a fast, well-balanced, protein-packed and yummy first meal of the day!  Add a few leaves of spinach to superpower your daily veggie intake.
